I am the Head of School of Health Sciences and a Professor in Nutrition and Dietetics in the Faculty of Medicine and Health. I am the immediate past Chair of the Council of Deans of Nutrition and Dietetics (ANZ), a Fellow of Dietitians Australia and have more than 30 years experience in clinical practice and dietetics education. My research has two primary focus areas.
1. Grains, whole grains and dietary fibre. This work examines the way grains, especially whole grains may provide health benefits, how the grains and whole grains may be classified and then how these messages translate to the foods we choose to eat.
2. Nutrition and Dietetics Education. How do we teach people about nutrition to improve the food and nutrition literacy of the population. My research examines how we teach dietitians to be nutrition experts and how we teach other health professionals about nutrition to provide clear messages.
